Recipe for light nachos

Delicious, simple and quick to prepare, nachos are a great classic of Mexican cuisine. The only downside is that between the chips, cheese, cream, meat and often the additives (especially sugar!) contained in commercial salsa and guacamole, they are not really healthy.

Here we offer you a version that is just as tasty, gratin-like and easy to prepare as the traditional recipe, but much healthier. In these vegan nachos, the chicken is replaced by tofu, the cream and cheese by vegetable substitutes, and the chips by corn tortillas. Low in calories and with no added sugar, this recipe is suitable for both vegans and those who want to indulge themselves while watching their diet.

Ingredients

200 g corn tortillas, cut into pieces
200 g vegetable cheese of your choice, commercial or homemade (preferably cheddar)
400 g firm tofu
3 multi-coloured peppers
2 onions
200 g homemade guacamole with no added sugar
200 g homemade or no-sugar-added salsa, or 4 diced tomatoes macerated in a little cider vinegar
200g vegan crème fraîche or plain coconut yoghurt, no added sugar
Chili spices
1/2 bunch of fresh coriander

Preparation

 

  1. Prepare the vegetables
    Finely chop the peppers and onions and set aside. Wash the coriander, chop it coarsely and set aside.
  2. Prepare the tofu
    Fry the chopped tofu in a pan with the chilli spices and a little olive oil (optional) until crispy. You can also use a Thermomix for this step.
  3. Assemble
    In a large baking dish, arrange corn tortilla pieces, tofu, onions and peppers. Top with grated or chopped vegetable cheese.
  4. Baking
    Bake for 10 minutes in the preheated oven at 180°C, placing the dish on the highest rack, or until the cheese is well melted.
  5. Topping
    As soon as you take the nachos out of the oven, spread the salsa or tomatoes, guacamole and vegetable cream over them. Finally, sprinkle with chopped coriander. It’s ready to go!
