Ingredients
2 burger buns
1 x 125g bag of Ebly
1 egg
1 bunch of fresh coriander
2 tablespoons tomato purée
1/2 onion
1 teaspoon cumin powder
1 pinch of mustard seeds
1 cucumber
salt and pepper
Preparation
- Preparing pre-cooked Ebly wheat
Open a 125g bag of Ebly and cook it according to the instructions on the packet. After cooking, when the wheat is tender, drain it in a colander. - Chop the coriander
Rinse the coriander under water, then on a chopping board, coarsely chop the leaves and stems, finer. Place the chopped coriander in a salad bowl. - Prepare the cake mix
In the bowl, break the whole egg and mix it with the coriander. Add the cumin powder, mustard seeds and tomato puree. Season with salt and pepper - Preparation of the vegetarian patties
Pour the cooked wheat into the bowl, mix with the coriander, egg, tomato puree and spices. The mixture should be smooth and a little sticky. You can mash the wheat with a fork in the bowl to bind it as much as possible. Divide the mixture into two equal parts. On the cutting board, shape by hand two round patties, the same diameter as the burgers. Set aside in a cool place - Prepare the onion and cucumber
Wash and cut the cucumber into 8 medium thick strips. Peel half of the onion and cut it into thin strips. Set aside - Assemble the burger layers
Place a sheet of baking paper on your oven rack (or a reusable baking sheet). Place the two burger bottoms on the rack and place the chopped onions on each bun. Then place a patty of Ebly mix on each bun, on top of the onions - Cooking the burgers
Put the burgers in the oven without the bun (which will cover the sandwich). Bake at 180°C for 2-3 minutes until the patties are golden brown. Once the patties are dry and golden brown, open the oven and place the two buns with the lids to close the sandwiches. Wait one to two minutes for the patties to toast slightly, so that the surface becomes crispy - Finishing the burgers
Remove the sandwiches from the oven. Open them and place 4 slices of cucumber inside each bun, on top of the Ebly mix patties. Close the burgers by replacing the lids.By placing the cucumber slices at the last moment, you will keep the crunchiness and freshness, which is very pleasant to eat. This recipe for a vegetarian burger made with pre-cooked Ebly wheat is an excellent alternative to the traditional burger, which is often made with minced beef: much lower in calories and more digestible, this sandwich is healthy.
