1 bunch of chard (or lamb’s lettuce or rocket)
1 lemon
1 shallot
2 tablespoons walnut oil
1 pinch of flat parsley
1 pinch of coriander
30 mint leaves
a few dried tomatoes
40 grams of walnut kernels
1 pinch of sesame


  1. Chop the shallot
    Peel and finely chop the shallot.
  2. Wash the chard
    Remove the leaves from the chard ribs and cut them into thin strips.
  3. Fry the chard and shallot
    Pour a dash of walnut oil into a frying pan and fry the shallot and chard.
  4. Prepare the tomatoes
    Cut the tomatoes (dried or cherry) into small cubes and add them to the pan.
  5. Seasoning the salad
    Finely chop the coriander and flat-leaf parsley before adding them to the pan and leave to cook on a very low heat for 15 minutes. Stir very regularly.
  6. Chop the mint
    In a bowl, finely chop the mint and set it aside.
  7. Allow to cool
    At the end of cooking, let the salad cool before adding the mint, nuts and sesame seeds.
  8. Season
    Squeeze the lemon to obtain a fresh juice to pour over the salad just before serving.
