Ingredients
1 bunch of chard (or lamb’s lettuce or rocket)
1 lemon
1 shallot
2 tablespoons walnut oil
1 pinch of flat parsley
1 pinch of coriander
30 mint leaves
a few dried tomatoes
40 grams of walnut kernels
1 pinch of sesame
Preparation
- Chop the shallot
Peel and finely chop the shallot. - Wash the chard
Remove the leaves from the chard ribs and cut them into thin strips. - Fry the chard and shallot
Pour a dash of walnut oil into a frying pan and fry the shallot and chard. - Prepare the tomatoes
Cut the tomatoes (dried or cherry) into small cubes and add them to the pan. - Seasoning the salad
Finely chop the coriander and flat-leaf parsley before adding them to the pan and leave to cook on a very low heat for 15 minutes. Stir very regularly. - Chop the mint
In a bowl, finely chop the mint and set it aside. - Allow to cool
At the end of cooking, let the salad cool before adding the mint, nuts and sesame seeds. - Season
Squeeze the lemon to obtain a fresh juice to pour over the salad just before serving.
