Does eating bread alone make you fat?

Eating bread on its own, without cheese, jam, butter, chocolate pastry or anything else, only makes you fat if you eat too much. If this consumption is reasonable and is not associated with other sources of complex carbohydrates (slow sugars) it does not make you fat!  The recommended amount is +/- 120 g/day for women and +/- 170 g/day for men.

 

How does eating bread in a diet work?

I was on a diet for a few months where bread was forbidden. It was very hard to resist the smell of fresh bread! Bread has a high calorie content, between 250 and 280 calories per 100 g, which should make it unfit for slimming diets.

On the contrary, it is thanks to its many qualities, essential to the proper functioning of the body, that it has its place: rich in fibre, proteins and “complex sugars” (appetite suppressants) and almost total absence of fat (lipids).

The proportion of fibre is approximately 3 g in 100 g of “standard” baguette and 9 g in 100 g of wholemeal bread (daily requirement: 25 g). The balance between sugars and fibres is ideal because the latter slow down the digestion of sugars.

The glycaemic index is reduced and the insulin that stores sugars in the form of bad fats is not required.

 

The recipe for crustless bread and our tips

This bread is steamed 

Ingredients :

– Flour 250 g

– Water 150 g (15 cl)

– Salt 1 teaspoon

– 2 teaspoons dry baker’s yeast (15 g fresh)

– Water (double boiler): 1.5 l

– Optional: oil, cider, spices (in small quantities)

Tip: for a colourful crumb with the taste of baked bread, add roasted barley flour.

Preparation:

– Mix water + yeast in the bowl for 2 minutes.

– Add flour + salt and knead for 2min30.

– Lightly flour the dough when you take it out of the bowl. Make a ball, keep warm in a dish suitable for the pressure cooker (25°C approx./1 hour) to make the dough rise.

– Pour the water into the bottom of the bowl, place the dish in it and cook (approx. 45 min.) Tip: cut the bread with a cookie cutter and grill it in the cookeo for 5 to 7 minutes.

Homemade bread – advantages and disadvantages?

I’ve been making my own bread for a few months now, I use a bread machine and the whole family enjoys it! The advantage of homemade bread is the control of the quality and quantity of the ingredients used.

If you suffer from arterial disease, if your kidneys are fragile and to avoid water retention, you can reduce the salt, without eliminating it completely. You can easily make bread with rice, buckwheat, corn or even starch flour and find an interesting alternative to the relatively expensive commercial gluten-free bread. But be careful!

Gluten is the wheat protein that gives bread its softness and the crumb its honeycombed texture, so it must be replaced by “guar gum”, “carob flour” or “xanthan gum”. You can even make high-protein breads by adding vegetable or animal proteins such as milk or soya to the dough.
